Behind an unassuming warehouse facade in Fortitude Valley, dinner runs entirely on live timber—no gas dials, no induction shortcuts. The room stays dark, lit mostly by the flare of dual hearth pits. Brisbane diners treat an evening here as an essential ritual, and it comes down to pinpoint cuisson. Plates move directly from the coals: Kiwami wagyu shortloin over onion cream, charred cucumbers laced with yuzu, and potato sourdough dragged through smoked cultured butter. Downstairs, the subterranean bar operates at a calmer cadence for solo pours and snacks away from the kitchen flare.
