Regulars bypass typical noodle bowls for the Phở Tái Lăn—beef seared hard in a pan before hitting the broth to impart a smoky wok-hei. Tables double down on Northern bún chả piled with charred pork patties and fresh herbs, or tear into crisp baguettes dipped straight into rich tomato-sauced meatballs.

They do exceptionally well with dishes from both the North and South, which is rare for a Vietnamese restaurant.

Unlike traditional pho where sliced beef is scalded by hot soup, the Phở Tái Lăn features pan-seared beef that imparts a distinct wok-hei aroma and richness directly into the broth.
Instead it's been stir fried first and this infuses an extra dimension of flavour to the soup.

However, I think the best part with the meal was their meatballs and baguette. My goodness, if I could drink that tomato based sauce that those meatballs were sitting in I would. It was so good!
