Tucked into a Salisbury shed, Hiker Brewing Co. pours fresh, unpretentious craft batches straight from the source. Industrial tin, roller doors, and room for dogs and kids—it has the feel of a working neighbourhood brewery. The taplist rotates through core Bushwalker pale ale, fruity IPAs, and house-made hard sarsaparilla and alcoholic lemon. Out back, rotating food trucks dish up loaded birria tacos with warm consommé, while inside, locals settle over Foxtel footy, pool, and tabletop games.
