While standard takeaway counters lean on frozen stock, the crew here rolls dough by hand for boat-shaped pides—and toasts both the carved meat and soft pita before rolling. Commuters pulling off Middle Road routinely leave with boxes of seasoned chicken and garlic sauce, or grab a strawberry-and-pistachio Dubai cup on the run.
