Open-Hearth Wood-Fired Cooking
Premium cuts and catches are prepared directly over live flame in an open kitchen hearth, infusing meats with rich, smoky character.
The food was just amazing and using beautiful wood fires to cook over just enhances the flavours so much.
Steve Bowden Signature Spanish Cochinillo
The kitchen showcases traditional Spanish whole-roasted suckling pig, finished with exceptionally crisp crackling and tender meat.
We came for the Spanish Cochinillo (Suckling Pig) so we shared several entrees before main course was served with extra crispy Crackling.

Before you head over
Essential ordering and planning advice for dining at Newstead’s live-fire grill.
Build Around Small Plates and Crudo
Dinners shine brightest when you build around starters and entrees—such as the Black Onyx beef crudo and baked spanner crab—before splitting one wood-fired main. Guests note that smaller plates deliver the most vibrant flavors and keep rich wood-grilled mains from overwhelming the meal.
Plan Group Size for the Set Menu
If you opt for the multi-course set menu, note that it is customarily intended for groups of four or more. Portions across shared mains and wood-fired cuts run exceptionally hearty, so avoid over-ordering when dining in smaller parties.
Enlist the In-House Sommelier
Rather than navigating the extensive European cellar on your own, consult the house sommelier at your table. Tailored recommendations for Mediterranean whites like Sardinian Vermentino effortlessly cut through smoky open-hearth meats and rich seafood broths. Reserve your table ahead to experience Bosco’s wood-fired mastery firsthand.
