Sugar takes a backseat here—patisserie fans come for the airy genoise sponge layered with fresh strawberries and grassy matcha cream. The Basque cheesecakes stray far from the standard vanilla, churning out molten centers spiked with black sesame, yuzu, mugwort, or hojicha chestnut.
