About The Inchcolm Bar

Tucked inside Spring Hill's heritage boutique hotel, this moody 28-seat enclave pairs spirit-forward cocktails with refined bistro dining. Patrons drop in for midweek quiet or celebratory date nights, settling beneath vintage art and dim lighting as live piano rolls softly across the room. The bar eschews sugary pours for clean, classic builds—think gin, dry vermouth, and limoncello in a Martini Limon, or a botanical Cucumber Rose with prosecco. From the kitchen come savoury bites like crisp pork and prosciutto croquettes, chive gnocchi tossed with sweet peas and radicchio, and rich clafoutis to finish.

  • Live Piano & Jazz: Evenings feature an understated solo pianist or jazz musician setting a relaxed tempo suited for quiet conversation.
  • Spirit-Forward Cocktails: The bar showcases tailored classic cocktails, including the citrus-laced Martini Limon and floral Cucumber Rose, over sugary drinks.
  • Compact Heritage Dining: An intimate 28-seat heritage space adorned with eclectic art pieces, marble tables, and low lighting.

The cocktail list prioritizes disciplined, spirit-forward classic recipes and signature twists over mass-market sweet drinks.

Perfectly executed spirit-forward cocktails! You won’t find any fruity cocktails on the relatively short menu, but what they do they do excellently.
